I wanted to share some of my favorite healthy dinner recipes from Beachbody’s Ultimate Reset. The Reset is an amazing 21 day cleanse with a complete meal plan (yes, you get to eat!) combined with all natural supplements designed to jump start your metabolism and detox your system. People are seeing crazy results so I wanted to share some of the healthy dinner recipes with you! These are three of my favorites!

Healthy Dinner Recipes:

Baked Salmon

1 clove garlic, minced
2 tsp. extra virgin olive oil
1 T. chopped fresh basil
1/4 tsp. herbal seasoning
1 T. chopped fresh parsley
1 T. lemon juice
1 6 oz. salmon fillet

In a medium glass bowl, prepare marinade by mixing garlic, oil, basil, salt, seasoning, lemon juice and parsley. healthy dinner recipesPlace salmon in a medium glass baking dish and cover with marinade. Marinate in the fridge about 1 hour, turning occasionally.

Preheat oven to 350 degrees. Place fillet in aluminum foil, cover with marinade, and seal. Return sealed salmon to dish and bake 20 minutes or until easily flaked with a fork. Serves 1.

 

Garlic Kabocha Squash

1/4 kabocha squash, seeds removedhealthy dinner recipes
2 T. sesame tahini
1 tsp. miso paste
1/4 tsp. finely chopped garlic
1 tsp. extra virgin olive oil

Preheat oven to 400 degrees. Place squash on baking sheet lined with foil. Mix together tahini, miso, garlic and oil and pour over squash; bake for 30 minutes or until squash is fork-tender. Serves 1.

Roasted Root Medley

healthy dinner recipes1/4 medium sized yam, washed and cut into 1-inch chunks
1/2 large carrot, washed and cut into 1-inch chunks
1/2 large beet, washed and cut into 1-inch chunks
1/4 yellow onion, peeled and cut into large wedges
2 tsp. extra virgin olive oil
Himalayan salt (to taste)

Preheat oven to 400 degrees. In a bowl, toss all ingredients together or in a large Ziploc bag. Spread on a cookie sheet and bake for 40 to 50 minutes or until tender, turning once or twice to prevent burning. Serves 1.
