Happy Independence Day! easy 4th of july recipes

4th of July weekend is upon us! Odds are it’s HOT outside and you have lots of fun activities planned outdoors and you are still frantically trying to figure out some fun, easy 4th of July recipes to wow your guests.

If you know me, then you KNOW cooking ISN’T my thangggggg….so, my prerequisites to any item is that it’s simple, doesn’t have any crazy ingredient I’ve never heard of and healthy (or at least semi-healthy…hey fruit’s healthy, right?!?!).

I do occasionally allow myself a splurge which is why I included the fruit pizza below (umm….sugar cookie crust–YES!).

So, grab your ingredients, whip these up fast and have your guests amazed at your skills. Ha!

And now for my 4th of July SPLURGGGGGE:

Star Spangled Pizza

INGREDIENTS:
1 package sugar cookie dough
8 oz cream cheese (softened)
1/4 cup granulated sugar
1 tsp. vanilla or almond extract
Berries of choice (strawberries, blueberries, raspberries, blackberries, you name it)

DIRECTIONS:
Preheat the oven to 350ºF.
Press the sugar cookie dough into a large non-stick pan (12 inch round) or a cookie sheet.  Leave an inch or two around the edges, as it will expand.
Bake the cookie crust for about 15 minutes or til lightly brown around the edges.
Remove the crust from the oven and let it cool.
In a medium bowl, combine the cream cheese, sugar, & vanilla (or almond) until smooth (frosting–yummm).
Spread the frosting over the cooled crust in an even layer.
Decorate with sliced fruits of your choice!
